A Valentine's Day Dinner Recipe: Tortellini with Veggies & Creamy Rosé Sauce!

Valentine's Day Gets Paired With Your Anniversary
When I was engaged to be married in 2001, right away I knew that I wanted a summer wedding with all of the trimmings: an outdoor gazebo surrounded by a red rose garden where I'd say my vows, a grand estate overlooking a lake for the photos, and hot summer weather so that the guests could dance and feast beneath the stars!  Let's face it, no winter bride wants the stretch limo to be stuck in a giant snowbank, or to get salt stains on her silk slippers.  So it was decided: a summer wedding it would be!  With great excitement, I started looking into venues.

But even the best laid plans often go awry, and I learned that the judge who was to marry my fiancé and I was retiring in mid-February.  I had to decide very quickly what was more important: this specific judge to officiate the wedding--in February; or to have my dream wedding--without the judge--in the summertime.  It was a very tough decision, but I decided to have the judge perform the ceremony in February.  It ended up working out well anyway, and we had a fabulous February wedding!  Check out a photo from our wedding, below.

What I noticed about having a February wedding--or by extension a February anniversary--is that Valentine's Day and our anniversary are easily paired together.  The idea of Valentine's Day and a wedding anniversary are very similar: to celebrate your love for one another, and to toast your togetherness as a couple.  In addition, with 5 little kids at home and a very tight schedule, the reality is that combining the two special occasions together into one just makes sense.  

However, this year my husband and I thought it over and decided to have a meal out for our anniversary, and to have a separate celebration at home for Valentine's Day.  Now that the kids are older, this is something that we are able to do once a year (thanks to the help of Grandma and Grandpa).    

In order to dine "alone" on Valentine's Day with my husband, I planned ahead to feed the kids dinner first, get them ready for bed, and then put on a movie for them.  This may not sound very intimate with the kids about, but trust me it's downright blissful to have an uninterrupted conversation--a rarity.

I decided that Olivieri Rainbow Tortellini (Three Cheese variety) and Olivieri Creamy Rosé sauce would make a quick, easy and tasty Valentine's meal.  Rather than following a recipe, I decided to cook what my family likes best, and purchased orange peppers, white mushrooms and onions to add to the pasta and sauce.  I also purchased veggies for a green salad and found this combination to be simple, delicious and health-aware.

Ever since I've adopted the cooking strategy of adding veggies and fruits that my family enjoys the most, I've found that there is less waste at the dinner table and more happiness all around.  I also follow this rule in my baking, and more recently in my puréeing of soups and juices.  It also makes yours truly more eager to eat my own creations.
This Tasty Valentine's Recipe Took Only 10 Minutes to Cook!

Jenna's Easy Valentines' Day Tortellini with Veggies & Creamy Rosé Sauce Recipe! 
10 minute cooking time - Serves 2 generously

Ingredients
350 g Olivieri Rainbow Tortellini Package (Three Cheese or Meat Variety)
300 ml Creamy Rosé Sauce Container
3 Orange Peppers deseeded and chopped (can substitute red, yellow or green peppers)
1 White Onion well chopped
1.5 Cups White Mushrooms well sliced 
2 Tablespoons Oil

Easy Directions
1.Heat oil in a skillet and add peppers, onions and mushrooms.  Sauteé until cooked through, then set aside.
2.Concurrently, boil Olivieri Rainbow Tortellini for 6-8 minutes at a medium boil.  Do not overcook.  Drain.
3.In a large bowl gently mix the Olivieri Tortellini, Olivieri Creamy Rosé Sauce and sauteéd veggies.
4.Eat on its own or serve with a green salad and ENJOY!  Serves 2.

  3. First, Happy Anniversary and the photo of you and your husband is beautiful! We rarely go out on Valentine's Day for dinner, the restaurants always seems so crowded and rushed. We prefer to have a more relaxed dinner at home and always make something special. Your recipe for Tortellini with Veggies & Creamy Rosé Sauce sounds delicious and I may very well try it this year!

  19. Valentines is a tricky event in my household. Kaelyn is a extremely picky eater. So Usually I just chop veggies or fruit into heart shapes and dye her food red. LOL But we go crazy for crafts and special fun things to do together, to make up for not having the greatest meal. Def wll be making this recipe tho. PRob on a weekend when kaelyn goes to her daddys!

  20. I had a February wedding which turned out to be more of a party with all our best friends and close family. But we had no other choice as soon after we had to go back to work on a cruise ship. It was also my dream wedding.

    As for cooking, my husband is like you, he likes to cook with whatever ingredients he's in the mood to have not following a recipe. And his dishes are some of the most delicious I've had. Then again, I love him so even if he cooks a disastrous meal, it would taste great to me :)
