When my dear friend told me I could make homemade cheese, I could not believe it! So to prove it to me, she came over and demonstrated her 5 minute cheesemaking technique! The cheese only requires 2 ingredients: homo milk and vinegar (or lemon juice).
First, we boiled 2 litres of homo milk on the stovetop on a medium-to-high heat, stirring about once every 5 minutes. Nothing hard about this.
Next, when the milk was clearly boiling, we poured in 3/4 of a cup of vinegar. My friend told me that we could have used lemon juice instead of the vinegar.
As soon as the vinegar was poured into the boiling milk, the mixture began to curdle. My friend cautioned me to make a small, stirring motion, so that the cheese would stay in large pieces, not small bits.
Next, we drained the milk of all vinegar. This would have worked best with a cheesecloth, but I used a dishtowel lined in a strainer instead. Voila!
The homemade cheese came out DELICIOUS! It looked and tasted a lot like hot ricotta cheese. It reminded me a lot like cheesecake, although no sugar (or other ingredients) were added. (This cheese is also called cottage cheese or paneer.)
I am not sure if it was because a cheesecloth was not used, but I could taste a slight vinegar taste. (It was still delicious, though.) Therefore, I would recommend trying this recipe with 3/4 cup of lemon juice instead.
