Easy Lentil Soup Recipe with Linky!

My Homemade Lentil Soup
I wrote one month ago about how my family has started eating healthy and gettting active.  Since this time, my husband and I have trimmed down a bit by eating better and getting more exercise.  We're both starting to feel lighter and leaner.  But more importantly, my husband and I've been home cooking and making sure that our family eats the healthiest foods available.  I wrote about 10 Simple Strategies to Get Your Family Healthy and Active last month, which I'd love you to check read.

Last night I decided to cook a homemade lentil soup.  Did you know that 198g of lentils contain 63% of your recommended daily fiber?  It's also very high in folate and manganese.  It's also great if you're looking for a good source of protein, iron, phosphorus and copper! 

I did not go by a recipe, but here's how I created the nutritious lentil soup shown above.  Here's the video of how to cook lentil soup on my VINE account!

Easy Lentil Soup
3 cups of green lentils (or lentils of your choice) - well-rinsed
6 large carrots - thinly grated
2 celery stalks - chopped
1 large onion - peeled and chopped
2 cloves of garlic - diced or sliced
1 tbsp oil (your choice of type)
salt - to taste
pepper - to taste
water

1.In your largest soup pot, saute the onion & garlic in hot oil.
2.Add lentils, carrots & celery.
3.Pour water in soup pot, leaving the waterline about 1" below rim.
4.Add salt & pepper to taste.
5.Bring soup to boil, then reduce to a medium heat so soup simmers.
5.Skim off any soup scum and discard (orange frothy foam on top of soup).
6.Cook lentil soup for 1 hour total.  (When the lentils start to burst open, it's ready!)

Serves 15-20 large bowls!

  1. This sounds delicious. And I'm impressed that you've made it through 30 days of eating well. Cooking at home really makes a difference I think since you control the ingredients. Good for you guys!

  12. I love lentil soup. I used to make this every Friday when I was a teenager. I haven't made any for a long time. Should go and buy some lentils.
